Granola

6 cups oats (use gluten free oats for gluten free)
1/2 cup firmly packed brown sugar
3/4 cup wheat germ (omit for gluten free or wheat free)
1/2 cup flaked coconut (optional)
1/4 cup sesame seeds (optional) - grind to desired consistency with a spice grinder
1/4 cup flax seeds (optional) - grind to desired consistency with a spice grinder
1/4 cup sunflower seeds (optional) - grind to desired consistency with a spice grinder
1/4 cup pumpkin seeds (optional) - grind to desired consistency with a spice grinder
1 cup chopped walnuts, pecans, or almonds (optional)
1/2 cup non-fat dry milk (for milk free use DariFree non dairy milk alternative powder or other powder milk substitute of equal amount)
1 cup raisins or other dried fruit

  1. Mix together everything but the dried fruit.
    • Combine:                                                                                                                                        2/3 cup honey                                                                                                                        2/3 cup oil                                                                                                                              2 tablespoons water                                                                                                                1 1/2 teaspoon vanilla (use gluten free vanilla for wheat and gluten free)
  2. Add to oat mixture.
  3. Stir to coat ingredients well.
  4. Pour into 1 or 2 large shallow baking pans.
  5. Heat in 300 degree oven for 25-35 minutes or until lightly browned. 
  6. Stir twice during heating.
  7. Stir occasionally while cooling.
  8. Crumble when cooled. 
  9. Add dried fruit if desired.
  10. Store in tightly sealed container.
*Makes about 14 cups.
*Granola may be frozen.
*Granola may be eaten as a snack or with milk as a breakfast cereal with or without any fresh or dried fruit
