White Bread

Dissolve two packets of yeast and a pinch of sugar in 1/4 cup warm water

MIX:
2 cups white rice flour
1 cup tapioca flour
1/2 cup cornstarch
2/3 cup powdered dry milk (if regular milk is used when mixing the liquid ingredients below, omit this   ingredient)
1/2 cup sugar
1 Tablespoon xanthan gum
1 1/2 teaspoons salt

MIX Liquid ingredients separately:
4 eggs beaten lightly
1 1/2 cups warm water (or use regular milk instead of water-if you use milk, be sure to warm it)
1/2 cup oil
1 teaspoon cider vinegar
  1. Add liquid ingredients and yeast to mixed dry ingredients.
  2. Mix well with mixer.
  3. Fill bread pan 2/3 full. (The dough is much moister than regular bread dough, so you just spoon it into the pans.)
  4. This makes one large loaf or a smaller loaf (8.5 x 4.5") plus some buns or a little loaf (6 x 3.5")
  5. Let rise until just over the pan.
  6. Bake the larger loaves at 350 degrees for 50 minutes. 
  7. The buns bake at 350 degrees for 30 minutes. 
  8. When done, remove from oven and leave in pan for 10 minutes
  9. Remove from pan and cool for 30 minutes longer.
*Cover breads, buns, etc. with aluminum foil after 10 minutes.
