1/3 cup sugar
1/4 cup oil
2 eggs
1/2 cup milk
1 teaspoon baking powder (use gluten-free brand for gluten-free)
1/2 teaspoon vanilla (use gluten-free brand for gluten-free)
1 1/4 cups rice flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon xanthan gum
- Preheat oven to 350 degrees.
- Line muffin tin with paper liners.
- Mix mashed banana, sugar, eggs and oil together well.
- Add the milk, baking powder, vanilla, rice flour, baking soda, salt and xanthan gum and mix well.
- Pour into muffin cups and bake 15-20 minutes or until done.
* Makes 12 muffins.
