Banana Muffins

2 mashed bananas
1/3 cup sugar
1/4 cup oil
2 eggs
1/2 cup milk
1 teaspoon baking powder (use gluten-free brand for gluten-free)
1/2 teaspoon vanilla (use gluten-free brand for gluten-free)
1 1/4 cups rice flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon xanthan gum

  1. Preheat oven to 350 degrees.
  2. Line muffin tin with paper liners.
  3. Mix mashed banana, sugar, eggs and oil together well.
  4. Add the milk, baking powder, vanilla, rice flour, baking soda, salt and xanthan gum and mix well.
  5. Pour into muffin cups and bake 15-20 minutes or until done.
* Makes 12 muffins.
